Kale/Romaine Salad with Creamy Cucumber Zucchini Cilantro Dressing

Ingredients

  • kale

  • romaine

  • grape or cherry tomatoes

  • 2 to 3 green onions

  • shredded carrots

  • julienned cucumber

  • 1/4 of a red bell

Dressing

  • 1 small zucchini

  • 1/2 of a small pickling cucumber

  • a large handful of cilantro

  • 2 teaspoons of raw sesame seeds (may be purchased at Mother's Markets)

  • the squeeze of one to two small lemons

In a large salad bowl chop up around 4 to 5 curly kale leaves. Please be sure to run your knife along the kale next to the stem and only use the leaves. (This will cut down on that bitter kale taste.) Next, make the dressing.

For the dressing, place the ingredients listed above into the Vitamix. Start blending on a low speed and increase to high to make it creamy. If it seems to need more liquid to blend smoothly, just add a squeeze more of lemon, or a bit more cucumber. Massage the dressing into the kale leaves. Add 1 to 2 cups of grape or cherry tomatoes, 2 to 3 green onions, some shredded carrots, 1/2 cup of diced cucumber, and red bell pepper. Enjoy summer in a bowl!!

Springtime Salad

Ingredients

  • Spring mix of your choice

  • 2-3 shredded carrots

  • 1/2 cup cabbage

  • two handfuls of bean sprouts

  • 1 cup of diced cucumbers

  • 1-2 cups of grape tomatoes

  • 1/4 cup of a red onion

  • 1/4 cup of less of cilantro

  • a bit of jalapeño

Guacamole

  • 1 avocado

  • 2 teaspoons of cilantro

  • red onion

  • some diced tomato

  • a squeeze of a lemon

  • a pinch of cumin

Dressing: Simply squeeze the juice of two lemons into a bowl and add a bit of paprika. Drizzle over the salad and enjoy!

Romaine-Arugula Salad with a Zucchini Avocado Dressing

Ingredients

  • Chop up 1 huge head of romaine and sprinkle in some arugula

  • dice 2-3 carrots

  • dice up 1/2 cup of cucumber

  • dice 1 red bell pepper

  • 1 cup of alfalfa sprouts

  • 1 pint of cherry tomatoes

  • some diced red onions

  • 1/4 cup of cilantro

Dressing:

  • 1 avocado

  • 1/2 cup chopped zucchini

  • the juice of 1 lemon

  • some red onion

  • a bit of jalapeño

  • a sprinkle of cumin and paprika

Blend the above ingredients in the Vitamix and pour over the salad.

Pad Thai

Ingredients

  • Spiralize 3 zucchini

  • 1/4 cup of red cabbage diced

  • 2-3 carrots julienned

  • 1 cup of bean sprouts

  • 2-3 green onions

  • 1/2 cup of cilantro

  • 1 diced red pepper

  • 2 teaspoons of black sesame seeds

Dressing

  • the juice of 1 apple

  • the squeeze of 1 orange

  • the squeeze of one lime

  • the squeeze of 1/2 a lemon

  • 1/3 cup of pistachios

  • 2 teaspoons of sesame seeds

Place the ingredients into the Vitamix and blend for a couple of minutes to make it creamy and smooth!

Romaine and Red Pepper Stars Salad

Ingredients

  • 2 heads of romaine lettuce diced

  • 1 red pepper sliced horizontally

  • 1 avocado turned into guacamole

  • 1 shredded carrot

  • 1 diced mango

  • 1/2 cup of cilantro

  • 1 diced Persian cucumber

Dressing: Simply squeeze three limes over the entire salad and enjoy!!

Rainbow Sushi

Ingredients

  • For the cauliflower rice:

  • 1/2 head of cauliflower

  • the squeeze of 2-3 limes

  • 2 green onions

  • a bit of ginger

  • a bit of garlic

  • Process the above ingredients in a food processor and set aside.

"Sushi" filling

  • 1 large ripe mango

  • 1 avocado

  • 1 red bell pepper

  • 2-3 carrots thinly sliced

  • 2-3 small Persian cucumbers

Nori wraps hand harvested are sold at Mother's Markets in CA

Take a Nori sheet and spread a layer of rice on. Add some topping and roll it up. Slice the pieces about an inch thick. Place on a plate and dig in!! Yummy!

Mango-Jicama Tacos

Ingredients

  • Chop up 2 mangoes

  • Dice small pieces of 1 jicama

  • 1/4 cup of cilantro

  • 2 cups of cherry tomatoes

  • 4 green onions

  • the squeeze of 3 limes

  • 1/2 tsp. of cumin

  • a sprinkle of cayenne

  • 1/4 of a jalapeño

Let the above ingredients marinate in a glass bowl in the refrigerator for a couple of hours. Serve in red cabbage leaves.

Corn-Mango Tacos

Ingredients

  • 4 ears of raw corn off the cob

  • 1 and 1/2 cup of tomatoes

  • 1/2 cup of cilantro

  • 1/2 cup of red onion

  • 1 avocado (I used a Reed avocado)

  • 2 diced mangoes

  • a bit of jalapeño

  • the squeeze of four limes

Use romaine lettuce leaves for the taco shells!
