Kale/Romaine Salad with Creamy Cucumber Zucchini Cilantro Dressing Ingredients kaleromainegrape or cherry tomatoes2 to 3 green onionsshredded carrotsjulienned cucumber1/4 of a red bellDressing1 small zucchini1/2 of a small pickling cucumbera large handful of cilantro2 teaspoons of raw sesame seeds (may be purchased at Mother's Markets)the squeeze of one to two small lemons In a large salad bowl chop up around 4 to 5 curly kale leaves. Please be sure to run your knife along the kale next to the stem and only use the leaves. (This will cut down on that bitter kale taste.) Next, make the dressing. For the dressing, place the ingredients listed above into the Vitamix. Start blending on a low speed and increase to high to make it creamy. If it seems to need more liquid to blend smoothly, just add a squeeze more of lemon, or a bit more cucumber. Massage the dressing into the kale leaves. Add 1 to 2 cups of grape or cherry tomatoes, 2 to 3 green onions, some shredded carrots, 1/2 cup of diced cucumber, and red bell pepper. Enjoy summer in a bowl!!
