Mango Basil Curry Noodles

Ingredients

  • For the noodles:

  • Spiralize 4-5 medium size zucchini into a large salad bowl

  • For the dressing:

  • 2 mangoes

  • 5 fresh basil leaves

  • 1 big tomato

  • the squeeze of one lemon

  • a small amount of jalapeno

  • 1/4 of a red bell pepper

  • 1 tsp. or organic curry powder

Process these ingredients in a Vitamix until it's a creamy consistency. Pour over your noodles and dig in!

Pasta Marinara

Ingredients

  • For the noodles:

  • Spiralize 4-5 medium size zucchini into a bowl.

  • For the marinara:

  • Use approximately 10 medium sun-dried tomatoes. (I sun-dried my tomatoes by slicing them thinly and them placing them in the sun for around 4 hours in the afternoon. I find this is easier than actually buying sun-dried tomatoes from a store because they sometimes have oil and salt in them.)

  • 1 chopped celery stalk

  • 1 chopped carrot

  • 1/2 garlic clove

  • 3 basil leaves

  • 1/2 tsp. of fresh oregano

  • 1/4 tsp. of thyme

  • 1/2 cup of red bell pepper

  • the squeeze of one lemon

Process the marinara ingredients in the food processor until it reaches a desired consistency. Pour your delicious marinara sauce over your noodles.

* This pasta is delicious with fresh tomatoes from the garden, so feel free to skip the sun-dried step.

Pesto Pasta

Ingredients

  • For the noodles:

  • Spiralize 4-5 medium zucchini into a bowl.

  • For the pesto sauce:

  • 1 small zucchini

  • 1 clove of garlic

  • 7 fresh basil leaves

  • a small handful of raw pine nuts

  • the squeeze of 1 lemon

  • Process the above ingredients in a food processor until it's reached a consistency that's a bit chunky. Process more if you'd like it smoother.

Place the sauce on top of the noodles and garnish with a couple of cherry tomatoes or basil. Close your eyes, imagine you're in Italy, and ciao down!!

Zucchini Noodles with Mango Cilantro Dressing

Ingredients

  • Spiralize 4-5 medium zucchini into a large bowl

  • For the dressing:

  • 2 ripe large mangoes

  • 1 orange bell pepper

  • 1/2 cup of grape tomatoes

  • 1 handful of cilantro

  • the squeeze of 1/2 an orange

Place the above ingredients into the Vitamix and blend until smooth. Pour over the noodles and garnish with some grape tomatoes!
