Banana-Date-Strawberry Nice Cream

Ingredients

  • 6 frozen ripe bananas (before you freeze your bananas, chop them up in smaller sections for easier blending)

  • 1 cup of ripe strawberries (fresh or frozen)

  • 4 Medjool dates

  • spring water or coconut water as needed (start with a small amount and add more as needed)

Place the above ingredients into the Vitamix and start blending. This may be a slow process as you want the ice cream to stay creamy, so don't get carried away with the water. Start with a 1/2 cup and add from there. Use the tamper to continually push down the ingredients. This is an absolutely delectable treat that will tantalize anyone's taste buds!! If you'd like the nice cream to stay frozen longer, put it into a glass container and let it freeze for an hour or longer. If you're really hungry and don't feel like waiting, dig in!

Peach Cobbler

Ingredients

  • 8-10 peaches

  • 2-3 nectarines

  • 1 to 2 pounds of Medjool dates

  • 1 cup or less of pecans

  • 2 teaspoons of cinnamon

In the food processor, place 10-12 dates, a bit of cinnamon, and 1/2 cup of pecans. Process until they look as if it could be used for a crust. Place the crust into a pie pan and spread evenly.

Next, slice your peaches sideways. With the leftover peach pieces, make a nectarine/peach drizzle. Place the 3 nectarines plus the leftover peach pieces into the Vitamix. Add about a teaspoon of cinnamon and start blending. Add a bit of water if the Vitamix needs some help blending. Layer this layer on top of the crust.

Add your sliced peaches next. In between the peach layers, add some chopped dates. Keep layering peaches and dates until you have your desired look! ENJOY!

Apple Pie

Ingredients

  • 7 thinly sliced apples (I used Pink Ladies!)

  • 25 pitted Medjool dates

  • 1.5 cups of dried figs

  • 2-3 oranges

  • cinnamon and nutmeg to taste

To make the ooey gooey crust:
Process in the food processor 17 dates and a handful of dried figs. Keep processing until you have a delicious looking crust! Press the crust into your pie pan.

To make the filling:
After you have thinly sliced the apples (I used my food processor), place them in a large bowl. Use almost all of the apples but save a couple for the topping. Next, squeeze the juice of one or two oranges into a separate bowl. Now, sprinkle some cinnamon and a bit of nutmeg into the bowl with the orange juice. Sprinkle that over your apples and let them soak!

To make the topping:
In a Vitamix blender, throw some apples, 8 dates, 5 figs, and cinnamon. Keep blending until you have a yummy looking topping! I squeezed some more orange juice into this mixture to make it moist. I even used a bit of water to make it smooth!
After you have made the filling and the topping, place your apples on top of your delicious crust. Then spread the topping on top of the apples and spread it around. Place in the fridge to let the flavors meld! ENJOY!!!

Carrot Cake

Ingredients

  • The pulp from about 3 pounds of juiced carrots

  • 2 cups dried mulberries

  • 1 cup raisins

  • 2 cups Medjool dates

  • 1 teaspoon of pumpkin pie spice

  • 1 tablespoon of ground cinnamon

Frosting

  • 3.5 cups of raw cashews soaked in water for 30 minutes and drained

  • 3.5 cups of fresh young coconut water (from 3-4 young coconuts)

  • 10 Medjool dates, pitted and chopped

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon of cinnamon

Topping

  • 1/2 cup shredded coconut

  • 1/2 cup of raisins

  • 2 tablespoons of orange zest

To make the cake, process all of the ingredients in a food processor.

To make the frosting, place all of the ingredients into the blender and blend until smooth. Use the tamper to blend everything smoothly. Always remember to start on the lowest speed and gradually increase the speed. If it needs some help blending, add a tiny bit of water.

To assemble the cake, take your springform pan and line it with parchment paper. Then add about 1/3 of your cake mixture into the pan. Top with 1/3 of the icing. Continue in this manner until you have three layers of epic raw cake! Freeze the cake for around 3 hours in the freezer. Add your toppings and ENJOY! I served this for a raw food potluck and it was a HUGE hit!! Make this one if you want to impress people and show them the beauty of raw food! Thank you Kristina for the inspiration!

Strawberry-Banana Cream Pie

Ingredients

  • 24 Medjool dates

  • 1 cup dried mulberries

  • 1 teaspoon of cinnamon

Filling

  • 4 ripe bananas

  • the meat of two coconuts

  • 2 cups of frozen strawberries

  • 1 teaspoon of cinnamon

This one is creamy and delicious!! It was a huge hit at my recent potluck!

Process the dates, mulberries, and cinnamon in the food processor until it looks like an ooey gooey pie crust. I divided the ingredients and processed two different batches because I have a small food processor. Then press the crust out evenly with your hands in a pie pan.

Next, blend the filling ingredients in the Vitamix and pour the filling over the pie crust. Place the pie into the freezer for about 4 hours. When it's close to serving time, slice up two cups of fresh strawberries and arrange on top of the pie. This one is sure to please everyone!
